Carrot and Coconut Energy Balls

This recipe is one we’ve been really excited to share with you. These carrot and coconut energy balls are honestly the best energy balls or bites I’ve tasted. I tend to keep some in my bag whenever I go out in case I need a boost, so I’ve tried a fair few – both making our own recipes, following others, and purchasing them pre-made. 

Not only are they super delicious, but they are definitely packed with energy and give you that oomph to get going. They also last extremely well, as we found out by accident: we made a huge batch of them a short time before Christmas, and as we were both heading in different directions for the festivities, it took a while for them all to be finished up. In fact, they were good right into the New Year…

We kept them packaged in a sealed lunchbox and wrapped in greaseproof paper, which is likely a factor in them keeping so long – so we would definitely recommend this storage method.
