We’ve got another exciting video for you today, as we tried out the Gluten Freegan coffee cake mix! We received this packet free of charge to provide you with an honest and unbiased review. It was perfect timing as I am still struggling to cut out lactose from my diet, and being both gluten-free and vegan, the range has a lot of options for me.
(By the way, I say in the video that it’s nut free… that was just me being silly! The mix does contain almonds, so it’s not actually nut free).
Let’s start with the process of making the cake. It was so easy to do that we really had no problems with it at all – it’s a very straightforward mix and the ingredients are easy to work with. While there is a need for apple sauce, which may not be in everyone’s cupboards, it will be a familiar staple ingredient for vegans who love to bake. It’s one of the best substitutes, and really does help to make the cake taste, well, like a cake.
The texture and taste of the cake were incredible. There’s very little chance that anyone would ever guess they were eating a cake that wasn’t made in the usual way – it’s moist, soft, and just delicious. The coffee flavour does come through very well, and with the use of real coffee, it even gave us a bit of an energy boost.
Of course, if you’re like me and hardly ever consume caffeine, you probably shouldn’t eat a slice right before bed… whoops!
