Mexican Tortilla Boats

  • 1 packet tortilla bowls around 12
  • 1 can black beans (around 400g)
  • 30 g sweetcorn frozen
  • 1 heaped tsp mole
  • 1 tsp BBQ herb mix
  • 1 white onion finely chopped
  • 1 spring onion finely chopped
  • 2 rashers Quorn bacon
  • Sour cream to taste
  • Guacamole to taste


  1. Cook the tortilla bowls according to the packet instructions so that they are heated and firmed up.

  2. Meanwhile, cook the black beans, sweetcorn, mole, BBQ herbs, onion, and spring onion all together in a frying pan. Cook over a medium heat until sizzling, and taste to check all is cooked and soft before serving.

  3. Put the black bean mix into a separate bowl while serving, or use a separate frying pan to cook the bacon.

  4. Fill each boat with 2-3 tablespoons of the black bean mixture, until full.

  5. Cut the cooked bacon into smaller pieces and insert each into the centre of a boat, like a sail.

  6. Put a dollop of guacamole and a dollop of sour cream on either side of the sail to finish off the boats.

Recipe Notes

If you have leftover black bean mixture, you can either serve it on the plate alongside the boats or keep it back for leftovers. Sorted!
