This week we’ve got something super special. These pizza pockets are about to blow your mind.
We’ve already shared with you our method of making pizza just a little bit healthier: the tortilla pizza. But now we’re taking that to a whole new level with the pizza pocket. It may look simple, but trust us: this is so tasty and spectacular you will want to eat it every night of the week.
These are so gooey and melty and just fantastic. The type of cheese you use will definitely make a difference, so if you don’t like red Leicester go for something similar. Cheddar or gruyere could be great alternatives, and shredded mozzarella would have a stringy effect too.

Delicious pockets of pizza goodness, without having to resort to using pastry.
- 4 corn and wheat tortillas
- 1 tube tomato puree to taste
- 4 mushrooms sliced
- 1/2 tin salad crisp sweetcorn
- 200 g red Leicester cheese grated
- 50 g smoked applewood cheddar crumbled
- 12 pieces Quorn pepperoni slices
Spread tomato puree across the base.
Layer on the red Leicester, mushrooms, sweetcorn, pepperoni, and cheddar, divided equally amongst the wraps with some red Leicester kept over.
Fold the tortilla into a pocket (see video above for how).
Turn upside down and sprinkle with the remaining cheese.
Bake at 180c (fan) for 15 minutes. The cheese should be bubbling and the tortilla starting to brown.
