Goodlife Mushroom and Spinach Kievs

Goodlife mushroom and spinach kievs

These Goodlife mushroom and spinach kievs are next on our list, and you could have predicted it if you read last week’s post – as we ate them at the same time as the Fishless Fingers that we tried!

The kievs certainly live up to their name as they are very, very garlicky! That’s a plus point for us as we love garlic but they could be a little too strong for others. There’s a base of quorn underneath the breadcrumbs, which is then coated in a very strong sauce. The mushroom flavour isn’t as strong, and in fact I would say that it is almost lost in the garlic.  read more

Video: Spinach and ricotta wraps

Spinach and ricotta wraps

We’re back with another new recipe! This week it’s our spinach and ricotta wraps, which we’ve spent a few weeks perfecting. It doesn’t hurt that the filling is so yummy, you might just want to eat it by itself.

This is of course based on the traditional spinach and ricotta cannelloni, though with our own take on things. I’ve personally never been a fan of the tomato sauce that is used as a based for the recipe. Instead, we’ve included our own nod to that by adding fresh cherry tomatoes to the filling, and letting the main sauce do all of the talking. read more

Vine Post: Caramelised Onion and Spinach Open Quiche

Caramelised onion open quiche

We have another open quiche recipe for you this week! This time it’s caramelised onion and spinach. It’s a fairly simple recipe, but a bit more classic than our apple and cheddar version.

I love the open quiche format because it’s all the tastiness of the filling without the fattening pastry. As much as I do love pastry, it’s just too much to eat on a healthy diet. That’s why we’re trying out a few of these recipes to come up with variations that we enjoy the most. read more

Veggie Living: Silverstone British Grand Prix

This week past, I was living the field life at the British Grand Prix. Silverstone has been my home for five days out of the year for a decade now, as I have been volunteering as a crowd safety (and now track safety) marshal for all of that time. You might think it’s pretty tricky to eat veggie food at a place like that, where all of the food stalls are focused mostly around burgers – but actually, it’s not so bad, and this year there were more choices than ever. read more

Asda Mushroom and Spinach Polenta Bakes

This is probably the “burger” with the longest name I’ve tried yet. Not only does it have a long name in the first place, but it also has a subtitle. This is the Asda Mushroom and Spinach Polenta Bakes with creamy mushroom sauce – and believe me, the packaging is a lie. Yes, alright, the bake does look sort of like that, but that’s about one-tenth of the sauce there, and since there are only two bakes in the packet, I guess the other plate was swimming. read more

Vine Recipe: Pesto and Cream Cheese Pinwheels

Pesto and Cream Cheese Pinwheels

This month on Vine, we’re trying all things pesto. First up is this simple and ludicrously tasty finger food, pesto and cream cheese pinwheels. They use a homemade pesto recipe which I’ll be sharing soon, and a very small selection of other ingredients. You can also purchase pre-made green pesto, though it won’t be as healthy (and might not be as delicious). read more

Veggie Living: Working Lunch

Veggie Living: Working Lunch

Quite often, I’m asked questions like “what do you eat?”. Non-vegetarians don’t seem to have any concept of what can be eaten without including meat, but actually it is a lot more simple to follow a vegetarian diet than you may think. Those who crave meat replacements can enjoy Quorn, tofu, and alternative recipes, and if you don’t mind, there are a million things you can eat without any form of meat or meat substitute. read more

Tesco Southern Fried Bean Burgers

Tesco Southern Fried Bean Burgers

When you read the name ‘Southern Fried Bean Burgers’, you expect something a bit obvious. A bit boring, even. Or at least I do. Just a simple burger is what I infer from that name – nothing very exciting at all. That’s why the team behind this product have really made a big mistake: because there is something really quite interesting about these burgers, that you would never guess at all from the name. read more

Vine Recipe: Cauliflower Base Pizza

Cauliflower pizza

For the second of our alternative pizza month Vines, we made a base out of cauliflower. I’m sure you’ve seen this idea elsewhere – it’s been quite widely used as an alternative way to create a pizza base, making it gluten free. I’m not a big fan of cauliflower, so I had been approaching this one with a little trepidation – was it going to taste like an actual cauliflower, or would there be subtler tastes at work? read more

Vine Recipe: Tortilla Pizzas

Tortilla pizza

This month we’re kicking off our first monthly Vine theme, with alternative pizzas. Tortillas were our first choice of base: they are healthier and easier to eat than normal pizza dough bases, and also take less time to cook. That makes them a win-win for any work night dinner for us!  read more
