We’re loving the fusion theme at the moment, and so these Italian quesadillas came to mind. We started with the basic idea of the Insalata Caprese: a salad which is meant to represent the colours of the Italian flag. Red tomatoes, white mozzarella, and green basil are a staple of this dish.

The Bakehouse at 124 – Beetroot Burger

This week we’re off to the British Grand Prix, so with five days of camping ahead, we started eating up all of our fresh food to get rid of it. As a result, there was nothing left to eat for lunch – which meant a trip to a local cafe was in order! The Bakehouse at 124 is relatively new to Tonbridge, but with bread and just about every other component of their food made in-house, they are definitely a special treat.

Vine Recipe: Veggie Bacon Gnocchi

Gnocchi is back! We actually love making our own gnocchi and find it a really simple but delicious meal to make. This recipe is adapted from our simple gnocchi recipe to give it that little something extra special: bacon! Obviously, we aren’t including real bacon, but we’ve discovered the Quorn bacon lardons which are really delicious when cooked up properly.

Recently, it was time for another visit to Mildred’s, our favourite veggie spot in London. This time, I decided to try the classic burger: smoked tofu, lentil, piquillo pepper in a focaccia bun with relish, rocket, red onion and tomato with vegan cheese. Vegan cheese! Tofu! Focaccia! I can’t explain the excitement. I also went for a side of sweet potato fries because, well, why wouldn’t you?

This was the Too Tasty beetroot and lentil salad, and I have to say it’s not something I would have tried myself. I hate walnuts and salad is never a word that makes me feel hungry – I’d rather have a wrap and pretend it’s a full-blown meal rather than a salad in disguise, but we followed the recipe and we had a big surprise.

Simple Green Pesto Recipe

It’s fair to say I normally try to reserve my Wednesday posts for burgers, but this month called for something a little extra. We’re currently going through pesto month over on Vine and in our Monday posts, so what better way to mark the theme than to share with you my favourite pesto recipe? This one is close to our hearts for several reasons. First, I love to make it in a big batch every month or so, storing it in a mason jar to serve over spaghetti or pizza for the rest of the week. Secondly, it was one of the first Vine posts that we did that saw a big response. It surprised us with how many loops, comments, and likes it got, and it remains one of our most popular Vines even now.
