This is something I’ve always wanted to try, and it carries on our beloved trend of “putting stuff inside other stuff”. Rather than a traditional lasagne, this one is layered inside and around a butternut squash. There’s no pasta involved, which is great for those of you avoiding it, and it’s a lot healthier than the normal version.
This week, we decided to do something with that free sauce we picked up at the Foodies Festival. We wanted to create something based around a ragu sauce, and went for this tasty spaghetti ragu number.
It’s very simple – no recipe to speak of, you just cook the veggies and mince together and then add the sauce. The spaghetti cooks separately, and when they are ready, you combine the two together. Give them a good mix and serve with garlic bread and a generous scattering of grated cheese on top. Done!
This recipe is so rich, you won’t want to stop eating it. We decided to try out a chicken and mushroom skillet because it’s the kind of recipe that normally you can really only do with real meat. How would it work with a meat substitute? We decided to give it a try, treating the Quorn chicken as if it was real chicken.
Anyone who reads this blog and hates spicy food, look away now. I know you’re out there because I’ve spoken to some of you, and this burger is just not for you. Even I, made almost immune by J’s insistence on adding a bit of spice to everything, found these burgers to be too hot. Way too hot. So hot it was actually pretty uncomfortable.
Gnocchi is back! We actually love making our own gnocchi and find it a really simple but delicious meal to make. This recipe is adapted from our simple gnocchi recipe to give it that little something extra special: bacon! Obviously, we aren’t including real bacon, but we’ve discovered the Quorn bacon lardons which are really delicious when cooked up properly.
So, the summer is almost over. There are maybe a few days of sunshine left to us, but as the nights draw in a little each week and the air gets colder, it’s easy to feel summer slipping away. Let’s go for a last hurrah of a summer barbecue – the kind that a vegetarian can enjoy!
They certainly don’t look like much on the packaging, and I would not have thought to try them at home. Like many of the newer Quorn products, they seem to be suffering from a bit of an identity crisis. They just remind me of the bland and stodgy Quorn I used to eat, and which I have vowed to avoid as much as possible. Who would have guessed that there would be something worth eating hiding away inside?

I’m actually a little delighted that I’ve found a recipe for a veggie burger which is very easy and quick to make. There are just three ingredients in this burger, so it does not get much easier than that! Plus, you can take out the breadcrumbs and make it even simpler if you need to. We served them up with a rasher of (fake) bacon on top, and drizzled a bit of sour cream and chive or ketchup sauce on top. The results were simple yet delightful.
This pesto burger was just a little bit inspired, even if I do say so myself. I saw a recipe for a beef burger imbued with pesto, and decided to set about making it myself. I knew I was going to have to think of a vegetarian replacement, so my mind went straight to Quorn mince. I’ve never used it in a burger recipe before, so this was the chance to jump on the opportunity!
Quite often, I’m asked questions like “what do you eat?”. Non-vegetarians don’t seem to have any concept of what can be eaten without including meat, but actually it is a lot more simple to follow a vegetarian diet than you may think. Those who crave meat replacements can enjoy Quorn, tofu, and alternative recipes, and if you don’t mind, there are a million things you can eat without any form of meat or meat substitute.
