This week we came up with some wonderful pieless pies, pretty much by accident. While wondering what on earth to cook for dinner, with depleted cupboards and a lack of inspiration, I suddenly hit on the idea of making a pie – without the pie.
Once we tried it, we knew we just had to make it again to film for you! It’s a great weekday warmer for these winter months, and can function as a Sunday lunch replacement too.
These cheat’s healthy cheese and onion pasties are absolutely delicious, basically a modern marvel, and so much healthier than the real thing you won’t feel guilty about eating five. Intrigued? Wait until you hear how we do it.
The main problem with a pasty, AKA one of the most delicious foods you can buy on an average high street which is fully contained within its own wrapper, is the pastry. It’s full of calories, most of them contained in the braided crust alone. So what can you do about that? Well, the answer is to take the pastry away – and replace it with the far healthier tortilla.
This mushroom and swede pie is one of those classic cases where you start off with one thing and end up with another. This pie was originally going to be done to a recipe I had found, but with the one change of taking off the pastry and using mash as a topping instead. Then I realised I didn’t have some of the ingredients. I ordered celeriac, but swede came instead. And after a while, I ended up making something that was totally different to what I intended – but almost certainly better.
And we’re back with another veggie feast – this time from our New Year celebrations! Just as with the Christmas food, we have a set schedule for our meals at this time of year. On New Year’s Eve we have a massive buffet with finger food to enjoy. Then on New Year’s Day we sit down to a two-course meal with starters and mains. Throw in copious amounts of champagne and other celebratory drinks and it’s a party!
