So this week I wanted to write a few lines about a little place to eat that we visit now and then, and which is definitely on my love list. Basil is a cafe/deli which serves beautiful food, much of it vegetarian, vegan, or gluten-free, in Kent. They currently have three branches: two in Tunbridge Wells, and one in Tonbridge – our favourite as it’s a short walk away!
Recently, it was time for another visit to Mildred’s, our favourite veggie spot in London. This time, I decided to try the classic burger: smoked tofu, lentil, piquillo pepper in a focaccia bun with relish, rocket, red onion and tomato with vegan cheese. Vegan cheese! Tofu! Focaccia! I can’t explain the excitement. I also went for a side of sweet potato fries because, well, why wouldn’t you?
We’re always on the hunt for a great toasted sandwich. There’s just something about combining gooey, melted cheese with seeded bread and getting all the right flavours together. So when we saw the idea for an Italian themed grilled cheese – combining three classic elements – we just couldn’t resist.
Our second Hello Fresh meal was rigatoni with cherry tomatoes and mozzarella, which was surely going to be an interesting one. For starters, we never eat pasta unless it’s in a sauce, and we also usually go for a healthy version rather than just the normal “white” pasta. Secondly, we never eat white onions, always red. And thirdly, I don’t like olives. Basically, this recipe had a lot of work to do to win us over!
It’s fair to say I normally try to reserve my Wednesday posts for burgers, but this month called for something a little extra. We’re currently going through pesto month over on Vine and in our Monday posts, so what better way to mark the theme than to share with you my favourite pesto recipe? This one is close to our hearts for several reasons. First, I love to make it in a big batch every month or so, storing it in a mason jar to serve over spaghetti or pizza for the rest of the week. Secondly, it was one of the first Vine posts that we did that saw a big response. It surprised us with how many loops, comments, and likes it got, and it remains one of our most popular Vines even now.
